Obiettivi formativi

L’insegnamento si inserisce nell’area di apprendimento GESTIONE, SOSTENIBILITÀ E QUALITÀ DELLE FILIERE AGROALIMENTARI ed ha lo scopo di far acquisire le informazioni necessarie per una autonoma valutazione delle caratteristiche qualitative dei principali prodotti orticoli impiegati nella alimentazione umana, sia relativamente ai prodotti freschi sia ai prodotti lavorati, al fine della più corretta gestione della filiera, dalla produzione alla tavola. L’insegnamento intende evidenziare gli aspetti innovativi di alcuni processi produttivi.

 The class is part of the learning area related to management, sustainability and quality of the food chains. It aims to establish the capacity building for an independent and knowledgeable evaluation of fresh and ready-to-eat produce in terms of quality to enhance the food chain efficiency, from farm to the table. Lectures are highlighting feasible innovations in products and process for vegetables.

Conoscenze e capacità di comprensione
Al termine dell’insegnamento lo studente dovrà conoscere le basi tecniche e biologiche per la produzione di ortaggi di qualità e per la gestione post-raccolta e dovrà saper sviluppare le conoscenze di base sui fattori relativi alla perdita di qualità degli ortaggi in post-raccolta e durante le lavorazioni.

Capacità di applicare conoscenze e comprensione
Lo studente dovrà avere la capacità di applicare conoscenza e comprensione dei fenomeni complessi della gestione delle filiere orticole attraverso la esecuzione del progetto La filiera ortofrutta dalla campagna al banco vendita, svolto in collaborazione con operatori della Grande Distribuzione Organizzata.
Lo studente inoltre dovrà integrare le conoscenze acquisite con le esperienze pratiche di verifica in azienda dei concetti espressi durante l’insegnamento.

Autonomia di giudizio
Lo studente dovrà formare una autonomia complessiva di giudizio derivata dal raffronto tra conoscenza fondamentale e teorica ricevuta in aula e conoscenza di realtà in aziende specifiche visitate durante l’insegnamento. 
Alla fine dell’insegnamento lo studente sarà in grado di proporre le tecniche più idonee per affrontare i più frequenti problemi di gestione della qualità dei prodotti orticoli in filiera.

Abilità comunicative
Lo studente dovrà dimostrare capacità di relazione con gli operatori del settore, interagendo durante tutte le attività previste in aziende specifiche.
Lo studente dovrà dimostrare capacità di lavoro di gruppo durante la esecuzione delle attività previste in squadra.
Lo studente potrà esercitare le sue conoscenze linguistiche attraverso scelta, lettura, preparazione e presentazione orale di un sunto di un articolo scientifico a scelta su un argomento pertinente il programma dell’insegnamento.
Lo studente potrà migliorare le proprie abilità comunicative attraverso i laboratori pianificati di Communication skills, quando presenterà in aula di fronte ai pari la elaborazione personale di un articolo scientifico a scelta.

Knowledge and understanding
The student will be able to know the technical and biological techniques to produce quality vegetables and to handle postharvest technologies related to them. The student will be able to enhance the fundamental knowledge of quality decays of vegetables during storage and postharvest processing. 

Applying knowledge and understanding
The student will be able to apply knowledge and have an understanding of the complexity related to the handling of produce by participating to the project The fresh produce chain from farm to selling point. The project is planned in collaboration with the Big Retailer Store companies. Furthermore, the student will integrate knowledge and practical experience in companies visited during the term of study. 

Making judgements
The student will learn making judgements based on the knowledge received in class and integrating it with its application in companies.
At the end of the term the student will be able to be engaged in problem tackling and problem solving issues related to how to preserve the quality of vegetables.

 Communication skills
The student will be able to interact with the playing actors of the chain during field trips to companies. 
The student will be able to execute team work with peers during the exercises planned for the practical training.
The student will be able to enhance his/her communication skills in the process of selection, reading, preparation and oral presentation of an article published in scientific journals. 
The student will enhance his/her communication skills during the sections dedicated to the oral presentation before the peers of the scientific article.

Modalità di insegnamento

 

Per raggiungere gli obiettivi formativi di questo insegnamento si utilizzano:

-        Lezioni frontali, impiegando materiale illustrativo sotto forma di diapositive e filmati, messe a disposizione degli studenti.

-        Visite tecniche in aziende del settore

-        Attività di esercitazioni di gruppo partecipando alle fasi di logistica della filiera ortofrutta presso un grande operatore del settore, con incluse attività di seminari offerti dagli stessi operatori.

-        Lavori di gruppo nella preparazione di report legati sia alle visite in aziende sia alle esercitazioni di logistica.

-        Attività di esercitazioni di comunicazione attraverso presentazioni in aula da parte degli studenti (in inglese).

Verranno svolte 40 ore di didattica frontale e 20 ore di attività esercitative (visite e esercitazioni)

 To achieve the learning objectives of this class, the followings will be used:

-        In class lectures, using visual aids such as slides and movies, all available to the students.

-        Field trips to companies of the sector.

-        Team work during staying at the logistics centre of a Big Retail Store, including seminars offered by the company and interaction during the visit of the storage facilities.

-        Team work for the preparation of reports of the field visits and of the staying at the logistics centre of the BRS.

-        Practical exercises of communication skills (in English) by way of in-classroom oral presentations of papers.

The class is planned with 40 hours of lectures and 20 hours of practical training.

Modalità di verifica dell'apprendimento

 

L’esame consiste nell’insieme di verifiche orali e scritte così distribuite:

-        Test scritto con domande a risposte multiple e domande aperte sugli argomenti trattati a lezione per un totale di 10 domande.

-        Verifica orale sulla qualità della presentazione di un articolo scientifico scelto dallo studente (in inglese).

-        Elaborato scritto di 10 pagine sulla analisi delle fasi di logistica della filiera ortofrutta, secondo la esecuzione del progetto La filiera ortofrutta dalla campagna al banco vendita

-        Report orale di aspetti legati alle visite tecniche in aziende di settore.

La valutazione per i lavori ai punti 3 e 4 è effettuata a gruppi. 

 

Qualifying exam will consist in oral and written assessments:

-        Written tests with Questions&Answers both opens and multiple choice styles for a total of 10 questions.

-        Oral assessment of the quality of the presentation of a scientific article using visual aids (in English).

-        Written report of 10 pages with the analysis of the supply chain management of the logistics centre, according to the project The fresh produce chain from farm to selling.

-        Oral assessment of the report of the field trips effected.

The third and fourth assessments of the list are team-based assessed.

La classificazione organografica degli ortaggi: organi riproduttivi, vegetativi, sotterranei.

Le caratteristiche qualitative degli ortaggi.

La organizzazione delle filiere orticole.

La segmentazione della qualità delle produzioni orticole.

I fattori pre-raccolta che influenzano la qualità degli ortaggi.

I sistemi produttivi.

Le innovazioni di processo e di prodotto nel settore orticolo.

La gestione delle fasi di raccolta e di post-raccolta dei prodotti orticoli.

Aspetti di fisiologia e di tecnologia post-raccolta dei prodotti orticoli.

Esercitazioni:

-        Progetto La filiera ortofrutta dalla campagna al banco vendita: seminari e visione fasi di gestione post-raccolta dei prodotti orticoli presso un Centro di Grande Distribuzione Organizzata.

-        Progetto individuale di Soft Skills: scelta, lettura, preparazione e presentazione orale di un sunto di un articolo scientifico a scelta su un argomento pertinente il programma dell’insegnamento.

-        Visite didattiche attive: visite di aziende del settore con interazioni con gli operatori.

-        Active Field Trips: field trip with interactions with the major players.
